Until about 2 years ago, when I had a piece of carrot cake at a friend candida s house. Mmm that is actually pretty good Soft, moist cake with a sweet white glaze around it. I found myself picking the carrot cake more and more when we had coffee and cake. And then it hit me, why not make my own carrot cake!
For the cake: 2 big carrots (grated) 2,5 ml ginger powder 5 ml cinnamon powder 150 g brown caster sugar 50 g white sugar 230 g self-rising flour 3 eggs 90 g walnuts Zest of 1 orange 240 ml vegetable oil
I couldn t find natural cream cheese so I used pineapple cream cheese for the creamy layer. This was okay, but a bit too pineapplely for my liking. So my glase therefore still needs a little improvement!
