INGREDIENTS 15 ml sunflower oil 1 onion, diced 5 ml Robertsons ground ginger 500g chicken breast, diced 1 red pepper, diced 250g tin of pineapple chunks, drained 30 ml brown sugar 80 ml vinegar 30 ml barbeque sauce 30ml tomato sauce 100 ml pineapple juice 60 ml water 10 ml Robertsons Garlic Salt
METHOD Heat the oil in a pan and fry the onion with the ginger until soft. Add the chicken and saute for 5 minutes. Add the red pepper and pineapple and cook for 3 minutes. Add the brown sugar, vinegar, barbecue sauce, ketchup, pineapple juice, water and garlic salt and stir well. Simmer for 12 minutes to thicken.
